Colombia - Julián Calderón Gesha - Brew Guide

Delicately juicy and floral, this Gesha from Julián Calderón in Palestina, Huila is one of the nicest Colombian Geshas we have come across. We have developed a couple of brew methods; both highlighting this coffee’s beautiful notes of jasmine, lemongrass and melon.

Let’s jump right in.

For this first recipe we used the clever coffee dripper. We felt that a full-emersion brew using a longer brew time and coarse grind setting would really let some of the delicate floral notes shine through. So that’s what we did and we were correct.

Recipe

Coffee: 25 grams

Grind size: 10 on the Fellow Ode (coarse)

Water: 375 grams at 200˚F

Water to Coffee Ratio: 15:1

Brew Time: 4:00

Brewer: Clever Coffee Dripper

 

Method

1.     Rinse filter

2.     Add ground coffee

3.     Start timer and saturate grounds with 75g water.  Stir.

4.     Let bloom 1 minute.

5.     Slowly add 300g water over the next minute or so, pouring in concentric circles from the middle of the brew bed to the edges making sure to evenly and fully saturate all of the grounds.

6. After all water is poured, stir gently.

7. At 3 minutes give the coffee another gentle stir and place the brewer on top of a cup or carafe and allow the water to draw down.

8.  Draw-down time should be about one minute for a 4 minute total brew time.

9. Serve and enjoy!

 

 

This pour over recipe uses a wide ratio to help highlight the delicate notes in this coffee as well.

 Recipe

Coffee: 20 grams

Grind Size: 4 on the Fellow Ode (medium)

Water: 340 grams at 205˚F

Water to Coffee Ratio: 17:1

Brew Time: 2:30

Brewer: Hario V60

 

Method

1.     Rinse filter

2.     Add ground coffee

3.     Start timer and saturate grounds with 60 grams water

4.     Let bloom 45 seconds

5.     Add 280 grams water over the next 1.25 minutes, pouring in concentric circles from the middle of the brew bed to the edges.  At 2 minutes all your water (600 grams) should be poured.

6. Once all water is poured, give brewer a few gentle swirls, this will allow water to draw down evenly.

6.     Wait for water to draw down. Draw-down time should be about 30 seconds for a 2:30 total brew time.

7.     Swirl, serve and enjoy!
