Refreshing and bright.  A sweet and juicy acidity similar to pomegranate and red currant is complemented by notes of earl grey tea, lemon sorbet, delicate floral notes and raw sugar.  Stunning!  

This coffee comes to us from the farm of Ermer Arturo Sánchez, located in the famed region of Palestina, Huila.  This lot is made up of Colombia Rosado (commonly, yet incorrectly, known as Pink Bourbon) and Caturra varietals. Ermer’s processing methods, combined with his farm’s unique terroir and his focus on cultivating heirloom varietal coffees allows him to achieved very complex, sweet and fruit-forward coffees.  The processing for this lot started with over-ripe harvesting followed by a 12-hour in-cherry resting.  The coffee is de-pulped before undergoing 48 hours of open-air dry-mass fermentation.  After fermentation the coffee is then washed and moved to a greenhouse where it is allowed to slowly dry over 15 days.   We are always excited to offer coffees from the Palestina micro-region and year-after-year Ermer’s coffees stand out as some of the very best.

This coffee, as well as all of our other Colombian coffees, comes to us from our friends and partners at La Real Expedición Botánica (LaREB).  

LaREB is a Colombian collective lead by coffee producers, focused on bringing their coffees to specialty roasters in the USA and Europe.  These roasters value coffee as something more than a commodify and are willing to pay fair prices that are tied to cost of production and quality rather than the ever-fluctuating stock market.


The work of the collective is centered in interdisciplinary actions: coffee studies, research, nationwide reach and, above all, transparent work between all team members.  LaREB looks to restore and reproduce traditional coffee cultivars and the agroforestry models that resisted the homogeny of the Green Revolution.  Their goal is to redesign coffee production in each regional project with a focus on quality.  Thus expanding the boundaries of what specialty coffee can be through specialized farms, which serve as experimental centers of learning and dissemination of post-harvest practices and processes.
