Ethiopia Ayla Bombe - Washed process

Ayla is a washing station owned by Testi coffee, from whom we purchased this coffee.  The station serves 700+ farmers in and around Shentawene town in the Bombe district of the Sidama region of southern Ethiopia.   The coffee in the surrounding hills grows around 2,000m above sea level.  The high altitude of the farms and of the washing station along with the station's location on the banks of a high-altitude river allow for longer, cooler fermentation and slower drying.  These long, cool fermentations and extended drying times help highlight and preserve the floral character and elegant citrus and stone fruit notes of the coffee and result in a very clean and elegant cup.  

Ayla Bombe is clean, floral, sweet and citrusy with very pleasing notes of jasmine and peach along with a custardy, key-lime pie sweetness.  The acidity is refreshing and the mouthfeel silky.  It's a beautiful example of the washed Sidama flavor profile.
