Coffee Story

Ecuador doesn't produce much coffee by global standards, but what it does produce has earned the attention of roasters around the world. Over the last decade, the country's producers have become known for chasing quality over quantity, and few farms represent that better than Pillcocaja.

The Crespo family farms in the Yunguilla Valley, where coffee grows beneath native shade trees and alongside protected forest. Their focus isn't on reinventing coffee through processing or following trends. Instead, they've invested in the things that matter most: healthy soils, thoughtful farming, and careful processing. The result is coffee that feels remarkably clear, balanced, and expressive from one harvest to the next.

This coffee is a Typica Mejorado, a variety that has become something of Ecuador's calling card. Believed to be a natural cross between traditional Typica and an Ethiopian landrace, it brings together the sweetness and elegance of one with the vibrant aromatics of the other. It's an exciting variety, but like most great coffee, its potential only shows up when it's grown and processed with care.

Varietal

Typica Mejorado is one of Ecuador's most celebrated coffee varieties and has become closely associated with the country's rise in specialty coffee. First identified in Ecuador in the late 20th century, it was long believed to be a natural hybrid between traditional Typica and an Ethiopian landrace, a theory based largely on its distinctive floral aromatics and cup profile. More recent genetic analysis suggests its parentage is more complex than originally thought, but it remains a unique variety that is found almost exclusively in Ecuador.

The variety is prized for its exceptional cup quality, often producing coffees with pronounced florals, layered citrus and stone fruit, and remarkable sweetness and clarity. Like many high-quality arabica varieties, Typica Mejorado is relatively low yielding and requires careful management to reach its full potential. When paired with thoughtful cultivation and processing, it consistently produces coffees that rank among Ecuador's finest and has become an important contributor to the country's growing reputation for world-class specialty coffee.

Process

Anaerobic washed is a modern adaptation of the traditional washed process that gives producers greater control over fermentation while preserving the clarity and transparency that washed coffees are known for. For this lot, after harvest, ripe cherries are fermented for 120 hours in sealed, oxygen-free tanks under carefully monitored conditions. The cherries are then washed to halt fermentation and remove the remaining mucilage before the coffee is dried for 25 to 30 days under carefully controlled ventilation, protecting the bean's structure while preserving delicate aromatics. Once drying is complete, the coffee rests until it reaches a stable 11 to 12% moisture content, ensuring cup clarity and fermentation precision.

When executed thoughtfully, anaerobic washed processing enhances rather than transforms a coffee. In this case, the highly controlled fermentation allows for an unusually long fermentation without overshadowing the coffee's inherent character. Rather than dominating the cup, it increases sweetness, amplifies aromatics, and adds complexity while preserving the clean finish and distinct sense of origin that make washed coffees so expressive. As with any processing method, success depends less on the technique itself than on the care and precision of the producer.

Terroir

The Yunguilla Valley sits in southern Ecuador's Azuay Province, tucked into an inter-Andean valley unlike the country's wetter coffee-growing regions. Here, coffee is grown among native faique forests on steep mountainsides overlooking the Jubones River watershed. The valley's pronounced dry season, abundant sunshine, and cool mountain nights create ideal conditions for both slow cherry maturation and consistent post-harvest drying. It's a landscape where coffee exists alongside one of Ecuador's most unique dry forest ecosystems, and many producers view protecting that environment as an essential part of producing exceptional coffee.

Yunguilla's specialty coffee story is still relatively young, but the region has quickly become known for quality rather than quantity. Farms here are generally small, and many producers have embraced varieties like Typica Mejorado and sidra while investing heavily in careful harvesting and precise processing. The combination of the valley's distinctive climate, diverse ecology, and a new generation of quality-focused producers has helped establish Yunguilla as one of Ecuador's most compelling coffee origins, producing coffees recognized for their clarity, vibrant florals, and remarkable elegance.
