A supremely sweet and mellow nature, along with a thick, smooth body make this coffee feel just like putting on your favorite sweater and pair of thick socks as you settle-in, in-front of crackling fire. Straight-up comfort in a cup. Look for notes of toasted marshmallow and dark chocolate malted milk balls.

Coffee Story
The Dark Side is a more developed roast of our Brazil, Carmo De Minas. With this coffee we are looking to create a darkish roast with all of the great attributes of a fully-developed coffee - high sweetness and body and a mild acidity - with none of the roast defects that oftentimes plague the dark roast category -ashiness and acrid smoke notes. Although dark by our standards, this coffee is still on the medium side of the spectrum.

Varietal
Mundo Nuovo is a natural cross between Bourbon and Typica. The variety was originally identified and planted in Brazil in the 1940s and has been a widely distributed varietal in the country since 1952. The varietal is characterized by a good cup quality and vigorous production but is late maturing and prone to disease.
Processing
This is a natural process coffee. The coffee is harvested and dried on patios and in mechanical dryers. After drying the coffee is sent to the dry mill where it is milled, sorted and prepared for export.
Terroir
Carmo de Minas in the Minas Gerais state of Brazil is widely known as the premiere area for high quality coffee production in the country. Many of the farms in the area are on the smaller side by Brazilian standards. Carmo de Minas has fertile soil, rolling hills and mountains with a sunny and mild climate. The latitude of the region is at the far southern extreme for coffee production. So, the region's relatively low altitude, 900-1500 masl, is sufficient for high-quality coffee production.
